Turn the oven on high heat (350°F).
Before draining, cook macaroni according to package directions.
Combine the cooked macaroni and sour cream in a large bowl and stir to coat the noodles evenly.
Remove the spring onion from the heat and coarsely chop it.
Separately, grate the white cheddar and mozzarella cheeses.
While the bacon is cooking, soften the chopped onions in the same skillet.
When the mixture begins to thicken, add the evaporated milk slowly while stirring continuously.
Stir the macaroni and seafood combination thoroughly before pouring the cheese sauce over top.
Add salt and pepper according to your preference.
Garnish with bread crumbs and top with shredded mozzarella cheese.
A little paprika can offer some color.
