### One of My Favorite Crockpot Meals: So Easy and Cheap!
#### Ingredients:
– 1 lb boneless skinless chicken breasts (or thighs for a juicier result)
– 1 can (15 oz) diced tomatoes, undrained
– 1 can (15 oz) corn kernels, drained
– 1 can (4 oz) green chilies, chopped (optional for added spice)
– 1 packet taco seasoning (or homemade seasoning)
– 1 medium onion, diced
– 1 cup chicken broth (or water)
– 1 cup shredded cheese (cheddar, Mexican blend, or your favorite cheese)
– Salt and pepper, to taste
– Optional garnishes: sour cream, cilantro, avocado, or tortilla chips
