## **Instructions**
### **1. Prepare the Crust**
1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2. In a bowl, mix the graham cracker crumbs, sugar, and cinnamon. Stir in the melted butter until combined.
3. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes, then set aside to cool.
### **3. Bake the Cheesecake**
1. Wrap the outside of the springform pan with aluminum foil and place it in a larger roasting pan.
2. Pour hot water into the roasting pan until it reaches halfway up the sides of the cheesecake pan (this prevents cracks).
3. Bake for 50-60 minutes, or until the center is slightly jiggly but set around the edges.
4. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open.
5. Remove from the water bath, cool completely, and refrigerate for at least 4 hours (preferably overnight).

1. Just before serving, sprinkle an even layer of granulated sugar over the top of the chilled cheesecake.
2. Using a kitchen torch, carefully caramelize the sugar until it turns golden brown and forms a crisp layer. (If you don’t have a torch, broil the cheesecake for 1-2 minutes, watching closely.)
3. Allow the brûlée topping to harden for a few minutes before slicing.
