#### For the Duck:
– 1 whole duck (about 5–6 lbs)
– 2 tablespoons olive oil
– Salt and pepper, to taste
– 2 teaspoons paprika
– 1 teaspoon cayenne pepper (adjust for spice level)
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon ground ginger
– 1/2 teaspoon ground cumin
– Fresh thyme or rosemary sprigs (optional, for stuffing)
—
#### 1. **Preheat the Oven**
Preheat your oven to **350°F (175°C)**. Place a rack in the middle of the oven.
#### 2. **Prepare the Duck**
Pat the duck dry with paper towels to ensure crispy skin during roasting. Rub the duck with olive oil, making sure it’s evenly coated. Season the duck generously with salt and pepper, and sprinkle the paprika, cayenne, garlic powder, onion powder, ginger, and cumin all over the duck, rubbing it into the skin.
#### 3. **Roast the Duck**
Place the seasoned duck on a roasting rack in a roasting pan, breast-side up. Roast for **1.5 to 2 hours**, or until the skin is golden and crispy, and the internal temperature reaches about **165°F (75°C)** when measured at the thickest part of the thigh. For extra crispy skin, you can increase the oven temperature to **400°F (200°C)** for the last 15–20 minutes of roasting.
While the duck is roasting, prepare the orange glaze.
#### 5. **Glaze the Duck**
During the last 30 minutes of roasting, start basting the duck with the orange glaze every 10 minutes, allowing the glaze to caramelize and form a sticky coating on the duck. Be sure to reserve some of the glaze for serving.
6. **Rest and Serve**
Once the duck is fully roasted and beautifully glazed, remove it from the oven and let it rest for 10–15 minutes before carving. This will help the juices redistribute, ensuring your duck is tender and moist.
