1. **Preheat & Prep**
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. **Cook the Filling**
Heat olive oil in a skillet over medium heat. Add onions and bell peppers, cooking until softened, about 5 minutes. Add the sliced steak, season with salt, pepper, and garlic powder, and cook until just browned. Remove from heat.
4. **Stuff & Roll**
On one half of each strip, layer a spoonful of the steak mixture and top with mozzarella and provolone. Fold the other half of the dough over the filling and pinch the edges to seal. Press down slightly to flatten.
5. **Bake**
Place the stuffed breadsticks on your prepared baking sheet. Brush the tops with melted butter and sprinkle with a little extra garlic powder, if desired. Bake for 12–15 minutes or until golden brown and bubbly.
