- 8 oz lo mein noodles (or spaghetti)
- 1 lb ground beef (lean preferred)
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated (or 1/4 tsp ground ginger)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 2 cups shredded cabbage or coleslaw mix
- 2 green onions, chopped (plus more for garnish)

1. Cook the Noodles
Bring a pot of water to a boil and cook noodles according to package directions. Drain and rinse under cold water to stop the cooking. Set aside.
