**Seafood Bisque: A Creamy Ocean Dream**
### Ingredients
– 1 lb (450g) mixed seafood (shrimp, crab, lobster, or a combination)
– 1/2 cup (120ml) dry white wine
– 3 tablespoons unsalted butter
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 2 stalks celery, finely chopped
– 1 medium carrot, peeled and diced
– 1 bay leaf
– 1/2 teaspoon dried thyme
– 1 teaspoon tomato paste
– 3 tablespoons all-purpose flour
– 4 cups (1L) seafood stock or fish stock
– 1 cup (240ml) heavy cream
– 1/2 cup (120ml) brandy or cognac (optional, for depth)
– Salt and freshly ground black pepper, to taste
– Fresh parsley or chives, chopped (for garnish)
– Lemon wedges (optional)
